It’s the first day of 2015- resolutions to be more positive, eat real food and take care of mind, body and spirit. We’re on a white sandy beach, 85-degree temps, lovely breeze and the tang of lime, sweetness of fresh bright red tomatoes, freshness of vibrant green cilantro and salty, perfectly marinated shrimp made this ceviche a memory that may last longer than the resolutions.
